Kurikulum yang digunakan oleh Sangkuriang Maritim Hotel Institute telah berdasarkan SKKNI (Standar Kompetensi Kerja Nasional Indonesia) Bidang Pariwisata & Hospitality.
Materi Ajar
Materi yang diajarkan di Sangkuriang Maritim Hotel Institute dibagi menjadi 4 Blok pelatihan, yaitu :
- Blok Pertama : Basic English, Food & Beverage Service (Theory & Practice), Menu Knowledge, Housekeeping (Theory & Practice)
- Blok Kedua : Profession English , Food Production (Theory & Practice), Hazard Analysis Critical Control Point (HACCP), Psychology of Service.
- Blok Ketiga : Bar Knowledge (Theory & Practice), Cruise Ship Knowledge , Front Office (Theory & Practice)
- Blok Keempat : Marlin English, Dry Practice
